From the moment the first plate arrives, you sense the intention behind the menu. The Alchemist Pani Puri is the kind of playful start that brings back childhood memories without losing its refined touch. It is fun, surprising, and instantly pulls you into Chef Meghana’s world of nostalgia and innovation. The Chicken Kurchan Tartlet follows, featuring its curried chicken filling tucked inside a crisp millet tartlet, beautifully balanced with avocado mayo. Each bite feels like comfort dressed up thoughtfully, with the flavours speaking loudly but gracefully.

The Paneer Tikka Crostini makes a quiet yet impressive entry—soft, marinated paneer layered over toasted sourdough, bringing together the warmth of tandoor and the elegance of a crostini.

And then comes the Pav Bhaji Fondue, a dish that deserves its own applause. It takes something so deeply familiar and turns it into a creamy, dip-style indulgence, served with warm pav and WBG’s signature spice mix. It is fun, it is familiar, and it is exactly the kind of dish you end up thinking about later.

Among the grills, the Zirakpuri Soya Chaap and the Satavar aur Chilgoza Ka Kabab stand out for their delicate yet bold personalities. The chaap brings tenderness and smokiness in perfect balance, while the asparagus and pine nut kabab offers a gentle, nutty richness that stays with you.  while the Masala Honeycomb Brioche is a soft, buttery surprise—sweet, savoury and incredibly satisfying.

For meat lovers, the Bhooni Boti delivers a comforting, robust depth—mutton morsels braised to tenderness, paired with saffron bread and a wasabi curd dip that adds just the right twist.

On the seafood front, the Fish & Chips—done the Meghana way—is an absolute delight. Instead of tradition, you get a light fish mousse paired with airy vegetable wafers and a crisp tartar sauce. It is familiar yet refreshingly new, like the best kind of reinterpretation. The Malted Crabs follow with their lime-brightened richness and delicate crunch, capturing the joy of coastal snacking with modern finesse.

The CTT—Chef Meghana’s thoughtful trio of chicken tikka—arrives with ricotta and sundried tomato kulcha, making for a plate that is both comforting and contemporary.

Dessert at WBG carries the same sense of artistry and sentiment as the rest of the menu. The Treasure of the Cholas, a delicate fox nut and rice pudding layered with rose petals and mixed nuts, feels like a gentle, fragrant celebration. It closes the meal in a way that is soothing, elegant and quietly indulgent—just the way a memorable dining experience should end.
