In the world we live in, it is of utmost importance to ensure sustainable practices and minimal wastage. From building long term relationships with suppliers and vendors to ensuring efficiency with ingredients in the kitchen and bar.
The East Village connection is a strong part of your identity. How does that bohemian spirit manifest in the style and presentation of your food? Are there specific dishes that exemplify this?
The East Village is a melting pot in itself- an amalgamation of cultures and communities that have a vibrant, diverse food culture. The menu presents all dishes simply, highlighting the ingredients and allowing simple flavours to shine. Our personal favourites are the Bajra and Ricotta Gnudi; the Seared Pork Belly; and the Orecchiette with Moringa Pesto.
When designing a new dish, what’s your creative process? How do you ensure it fits within the overall Toast & Tonic aesthetic?
There is alot of research and trials that go behind creating any new menu. The first thing we ask- Is it delicious? Have we gotten the components right? Does it need anything more or less? That is key. We draw inspiration from all over the world but yet stay true to our East Village traditions.
How does the menu evolve to stay relevant while maintaining its core identity? Are there specific trends you’re observing or influencing?
Every element of the menu, from the carefully curated dishes to the artisanal gelatos, pays tribute to the vibrant flavours and ingredients of India, blending seamlessly with international flair to create a truly distinctive dining experience that is both globally inspired and locally rooted.
You mention ‘comforting’ food. How do you redefine comfort food in the context of your innovative approach?
There are some flavour combinations that are inherently nostalgic and comforting- from Cream Cheese Garlic Buns to Chicken Meatballs to Mushroom and Asparagus Risotto. The innovation comes forth in the technique of preparing familiar ingredients and turning them into a unique dish and experience. Our Cereal Milk gelato offers a playful twist on childhood nostalgia, while the Dark Chocolate Sorbet and Passion Fruit Sorbet provide rich and refreshing contrasts.
