Where Local Meets Global: Inside Toast & Tonic’s Culinary Alchemy

Where Local Meets Global: Inside Toast & Tonic’s Culinary Alchemy

At Toast & Tonic, food isn’t just about what’s plated—it’s about where it comes from, how it’s made, and the story it tells. Rooted in the rich traditions of New American cuisine yet reimagined with bold local flavors, this artisanal kitchen blurs the lines between comfort and curiosity. From the streets of East Village to the markets of India, every dish on the menu is an ode to mindful sourcing, modern techniques, and timeless flavors. Think crisp Himachal apples in a zesty beetroot salad, creamy local burrata reinvented, or Bandel cheese paired with a punch of Naga chilli—Toast & Tonic invites you to taste familiar ingredients like never before. This is where conscious cooking meets culinary creativity, all while championing sustainability and simplicity in the most delicious way possible. Toast & Tonic emphasizes ‘artisan-inspired’ food. Can you elaborate on what that means in practice? How do you balance comfort with ‘gastronomically curious’ elements? This menu is a testament to the richness and diversity of India’s culinary landscape, showcasing the finest locally sourced ingredients and artisanal specialities. From the crisp Himachal apples that add a tangy twist to the Caramelised Apple and Beetroot Salad, to the creamy locally made burrata cheese that stars in the Burrata 2.0, every dish celebrates the unique flavors of the region. These ingredients are used to create familiar, comfort dishes that guests know and love. Local inspirations are a key part of your philosophy. Can you give specific examples of how local ingredients or techniques influence your dishes, and how you ensure they complement the ‘New American’ style?’ The chefs’ commitment to using locally sourced produce, such as fragrant leeks, and succulent Pondicherry prawns, ensures that each bite is not only delicious but also supports the local community. New American cuisine assimilates flavours from a melting pot of techniques and ingredients, which is reflected in dishes like Bandel cheese puffs with Naga chilli sauce and the much-loved Jowar salad that are just a few examples that add depth and authenticity to the menu. Sustainability is mentioned as a pillar. How does this translate into your food sourcing and preparation? Are there specific practices you’re particularly proud of? In the world we live in, it is of utmost importance to ensure sustainable practices and minimal wastage. From building long term relationships with suppliers and vendors to ensuring efficiency with ingredients in the kitchen and bar.  The East Village connection is a strong part of your identity. How does that bohemian spirit manifest in the style and presentation of your food? Are there specific dishes that exemplify this? The East Village is a melting pot in itself- an amalgamation of cultures and communities that have a vibrant, diverse  food culture. The menu presents all dishes simply, highlighting the ingredients and allowing simple flavours to shine. Our personal favourites are the Bajra and Ricotta Gnudi; the Seared Pork Belly; and the Orecchiette with Moringa Pesto. When designing a new dish, what’s your creative process? How do you ensure it fits within the overall Toast & Tonic aesthetic? There is alot of research and trials that go behind creating any new menu. The first thing we ask- Is it delicious? Have we gotten the components right? Does it need anything more or less? That is key. We draw inspiration from all over the world but yet stay true to our East Village traditions. How does the menu evolve to stay relevant while maintaining its core identity? Are there specific trends you’re observing or influencing? Every element of the menu, from the carefully curated dishes to the artisanal gelatos, pays tribute to the vibrant flavours and ingredients of India, blending seamlessly with international flair to create a truly distinctive dining experience that is both globally inspired and locally rooted.  You mention ‘comforting’ food. How do you redefine comfort food in the context of your innovative approach? There are some flavour combinations that are inherently nostalgic and comforting- from Cream Cheese Garlic Buns to Chicken Meatballs to Mushroom and Asparagus Risotto. The innovation comes forth in the technique of preparing familiar ingredients and turning them into a unique dish and experience.  Our Cereal Milk gelato offers a playful twist on childhood nostalgia, while the Dark Chocolate Sorbet and Passion Fruit Sorbet provide rich and refreshing contrasts. A Few Dishes That You Must Try There are a few dishes that you cannot afford to miss in putting them in your mouth. Here are some finger licking dishes that you must try at Toats & Tonics: Mixed Mushroom with Burrata Flatbread A rustic flatbread topped with an earthy medley of locally sourced mushrooms, finished with velvety burrata and a hint of garlic oil. Comforting, creamy, and packed with umami—this one’s a textural treat that balances indulgence with elegance. Dan Dan Noodles A fiery, flavour-packed bowl inspired by Sichuan street food, reimagined with finesse. Springy noodles tossed in a nutty sesame-chilli sauce, layered with house-made spiced meat, pickled greens, and a dash of umami magic. Bold, comforting, and unapologetically addictive—this is soul food with serious attitude. Chimichurri Chicken Juicy, grilled chicken marinated in bold herbs and spices, finished with a punchy, house-made chimichurri that brings brightness to every bite. Served with seasonal greens and a hint of citrus, this dish is equal parts zesty, smoky, and satisfying—simple ingredients, done exceptionally well. Nolen Gur Tres Leches This dessert is a decadent twist on the classic, soaked in three types of milk and sweetened with the smoky, caramel warmth of Bengal’s beloved Nolen Gur. Light as a cloud, yet indulgent to the core—this dessert is where Latin comfort meets Indian soul. In Conclusion At Toast & Tonic, every dish is more than a meal—it’s a mindful experience, rooted in locality and layered with global finesse. Whether you’re drawn in by the nostalgia of comfort food or lured by culinary curiosity, this is a space where boundaries blur, and bold ideas meet soulful simplicity. With ingredients that champion the land and stories that celebrate both East Village

As we head further into 2024, various trends are moving into high gear in changing the industry landscape. Here’s a look at what’s trending in food and beverage this year: Food and beverage industry  Plant-based innovations Plant-based diets continue to grow, but 2024 dawns a new peak of innovation, something out of the ordinary. Novel plant-based protein innovations are finding their way into everyday products that boast better taste, texture, and nutrition. Watch for even more plant-based seafood and dairy alternatives that more closely mimic their original counterparts. Companies also work on a way to lighten their products’ environmental footprint, yielding well with eco-conscious consumers. Functional Foods and Beverages Now, health-conscious consumers are looking to foods and beverages to provide them with more than just basic nourishment. In the running are increased diversification tendencies this current year: products featuring adaptogens, probiotics, prebiotics, and other functional ingredients that avow mental clarity, immunity, and overall well-being. The other area that is building is found within hydration products with an added punch of electrolytes and vitamins. Sustainable Practices Sustainability continues to be prominent, as more brands embrace eco-friendly practices—such as reducing packaging waste and sourcing ingredients responsibly, and practicing regenerative agriculture, including transparency in sourcing and production—as consumers become more curious about their food choices and their impact on the planet. More companies are likely to embrace the circular economy and upcycle their food waste by making it into new products.   Tech-Enabled Food Experiences Technology is innovating the mining sector. From AI-adapted kitchen gadgets to robotic food delivery, technology is evident. Virtual reality and augmented reality are also taking the experience of dining to a new level through immersive menus and other interactive elements that blur the line between entertainment and eating. Moreover, data analytics further aid eateries and food brands in understanding much more about eating habits and hence, planning accordingly. Global Flavors and Fusion Cuisine Globalization has eventually led to tolerance and acceptability of various culinary traditions worldwide. By the year 2024, fusion cuisine will be in full expedition, with culinary experts and food brands testing various cross-cultural flavors and ingredients. We can expect more innovative combinations of flavors, inclusive of Korean-Mexican tacos or Mediterranean-inspired sushi rolls. Traditional regional ingredients will find increased use since consumers will reach out to food for that sense of originality and individuality. Zero-Waste And Upcycled Foods The zero-waste movement is catching on, with more and more brands and restaurants working to reduce food waste. Upcycled foods are entering the mainstream as they are made from surplus or formerly filleted ingredients. In both cases, products would not only help reduce waste but also would provide innovative taste experiences and often unique flavours. More and more consumers support businesses that are trying to put sustainability and resourcefulness at the core of their practices. Personalised Nutrition Technology continues to advance, meaning it is now possible to tailor nutrition much more precisely. With DNA analysis and wearable health technology, consumers can get individual dietary recommendations based on health needs and goals. This trend is, therefore, shifting towards meal plans, supplements, and even food products that meet specific nutritional requirements. Mindful Eating Mindful eating is slowly gaining popularity as the many ways in which food and mental health are related become better known. This trend places much importance on relishing meals, portion control, and being present while eating. All the same, its increase mirrors that of products and services that put forth a balanced and thoughtful, theoretic attitude towards food.   Conclusion: At the beginning of 2024, innovation meets tradition in the food and beverage sector, driven mainly by health, sustainability, and personalization. From cutting-edge technology to global flavors, with sustainability center stage, trends show a changing landscape of food culture to become more conscious and connected. For consumers, this means an exciting array of options that satisfy taste buds and values alike.
