The concept of Santé is impressively simple. Based on the principles of vegetarianism, veganism, and environmental awareness, every dish at Santé is a contribution to the nourishment of both the body and the Earth. The restaurant mirrors this philosophy — it is decorated in soft white and soothing green colours, is bright with natural light, and exudes an aura of calmness. It is more like going to a spa than dining out, and a great way to pause and reconnect with the essentials.

We kicked off the experience with the Charcoal Lemonade — Santé’s signature detox drink that embodies its spirit in every respect: fresh, cool, and just a little bit brave. The charcoal gives a nice, clean smoky note to the drink, while the lemon brings both tartness and light, making it a totally refreshing and energising combination. It is a drink that compels one to slow down and enjoy the moment — a perfect prelude to the feast.
A Journey Through Global Flavours

The menu at Santé is like a world atlas — but instead of countries, it shows the global impact of the green cuisine with its plant-based meals. The Venezuelan Guasacaca, a lively avocado-based dip, was a delicious and nutritious starter served with some rustic crackers. The taste had smoothness and bright freshness coming from lime and herbs — a great example of how health and indulgence can be combined.

Then we had the Thai Spiced Mushroom Dimsums, light and tasty, made with thin and light dough that lets you see the delicious mushroom umami inside. The dim sum’s taste was controlled to one hundred per cent — the food had soul but was not heavy. This food philosophy of Santé is there in the small things — every meal is balanced, deep in meaning, and thoughtful.
The Stir-Fry Broccoli and Mushroom was very comforting and familiar but also had some polish and refinement added to it. The vegetables and mushrooms were still crisp and fresh and were only lightly tossed in order to bring out the natural earthy flavor. The real star of the show, however, was the Heritage Farmed Organic Bajra Riso — a healthy and delicious re-imagining of risotto made from bajra (pearl millet). Soft, nutty, and very filling, it was a perfect example of how Santé’s mission is to link luxury with local, and health with taste.

The Sweets at Santé are nothing like the stereotypical ones, which are rich and unhealthy. The Real Pistachio and Valrhona Cookie Skillet came out of the oven warm and fragrant, with the soft part of the cookie slowly oozing out, making it very inviting. It was made diversely with top-notch Valrhona chocolate and real pistachios, and was very decadent yet pure — a dessert that gives complete satisfaction without any remorse. The Decadent Brownie, which was thick and rich, was the perfect finale to the meal.
Santé Spa Cuisine is a chance to slow down your life and eat with awareness. Mindfulness is very much encouraged through every detail, be it the ingredients or the ambience, and yet pleasure is not compromised. It is dining that gives you a good feeling and also does good, a very rare harmony between indulgence and intention.
