The Pogabettina Mettani Vankaya — smoked aubergine mash served with crusty thatte idli — is like a reassuring whisper from Andhra’s heartland, while the Chrompet Kozhi 65, with its curry leaf sour cream drizzle, adds a surprising twist to a familiar South Indian favorite. The Kappa Cutlet, with fillings of onion, beetroot and spiced tapioca cutlets served with beetroot chutney, very crispy and delightful.
Each plate from Madras Kitchen is a bridge between yesterday and today — the recipes are classic, but presentation and technique imbue them with a new existence, one that will satisfy the nostalgia of the diner and the curiosity of the explorer.

The Bangalore Rains blend tequila, green chilli, and curry leaves to recreate the city’s vibrant monsoon mood. The Madras Muttai offers a playful twist with rich notes of coffee and cocoa that echo Chennai’s love for indulgence. The Malabar Monsoon brings the essence of Kerala’s coast with hints of coconut and spice that feel like a sea breeze in a glass. And the Mylapore Bloom, a delicate mix of rose, honey, and cold-brewed tea, perfectly captures the calm grace of temple mornings.
