Amid the serene charm of Grand Mercure Bangalore, By the Blue celebrates the essence of Indian culinary traditions. The newly curated menu draws inspiration from age-old techniques, from the gentle smokiness of clay pot roasting to the layered richness of Dum slow-cooking, evoking the warmth and nostalgia of an Indian kitchen while adding a modern flair.
The culinary experience begins with Shuruaat, featuring soulful starters such as Moong Dal aur Nariyal Shorba for vegetarians and the aromatic Dum Adraki Nalli Shorba for non-vegetarians. In Pehele Kadam, guests can indulge in creations like Anjeer Kebab with Spiced Yogurt & Curry Leaf Dust, Delhi Style Aloo Tikki Chaat prepared tableside, Gandhraj Chilli Mahi Tikka, and Mutton Gilafi Seekh Kebab, each highlighting distinct regional influences.

The Khaane Khaas section transports diners to the North with dishes such as Bagh-e-Sabz, Aloo Dum Kashmiri, Murgh Tikka Makhani, and Mangalorean pomfret curry, complemented by Chawal ki Peshkash, showcasing aromatic pulaos and biryanis like Subz Pulao and the indulgent Paradha Nashin Biryani.
To elevate the dining journey, By the Blue also offers a repertoire of expertly crafted beverages. Signature cocktails such as The Front Fire and Saffron Saddle promise bold and spice-kissed indulgence, while refreshing mocktails like Pink Himalayan and Thandai Bloom provide perfect balance.
