Sukesh began his culinary journey in Trident Hilton, Cochin, and followed it up with sharpening his culinary skills in various renowned IHCL hotels—Taj Club House, Chennai, and Taj West End, Bangalore, to Taj Jumeirah Lake Towers, Dubai. Sukesh has turned into a culinary chameleon over the years, acquiring expertise in a variety of cuisines and cooking techniques while having his feet on firm roots.

At Gateway Bekal, Chef Sukesh prepares customized menus on request, showcasing his skill at fusing Kerala’s rich culinary heritage with global flavours. His preparations are an expression of syncretism of tradition and innovation, and his new recipes—Balinese Fish Curry, Greek Chicken Souvlaki, and Avocado Hummus with Roasted Beet and Heirloom Tomatoes—are good examples.

Balinese Fish Curry

This colourful dish captures Southeast Asia’s pungent flavours in a carefully composed marinade of shallots, garlic, turmeric, coriander root, and fish sauce. A red chili-spiced coconut curry sauce imbued with palm sugar, tamarind, and kaffir lime takes the seared fish steak to gourmet heights. Paired with steamed jasmine rice and chili sambal, the dish warms and stretches the palate in every mouthful.

Greek Chicken Souvlaki
