Taj Holiday Village Resort & Spa, Goa welcomes Chef Somnath Rakesh as executive chef. A seasoned culinary professional with over 23 years of varied experience of handling kitchen of business hotel as well as resorts and luxury properties.
Starting his journey with Taj Bengal soon after completing his Hotel schooling from IHM Gangtok, Chef Somnath has grown from strength to strength within the group working with Taj Bengal, Taj Jumerah Lake Tower, Dubai, and Taj Cape Town, South Africa, during which he was instrumental in pre-opening of Taj Cape Town and then Taj Jumerah Lake Tower. Setting up state-of-the-art kitchen facilities, menu curating and implementing, quality control, training and development, and most importantly, efficient costing.
This being his second stint with Taj Holiday Village Resort & Spa has taught him the nuances of niche clientele.
Passionate about cooking from a young age, inspired by his curiosity of how tastes merge with each other’s, his love for food directed him towards cooking at an early age because he firmly believes that if you want to eat good food, you must know how to prepare it. Thus, Chef Somnath decided to follow cooking as a profession. His culinary skills are a fine combination of traditional techniques and modern thinking, which opens a new horizon of contemporary recipes.
Learning the nuances of curries and kebabs and the patience that one needs to get it right, giving it that definite homely touch. Particularly, choosing authentic ingredients and herbs that are fresh and grinding his own masalas has been his mantra. He says, “Cooking is all about getting the finer things right.” He is a strong believer in experimenting in the kitchen and delivering a surprise element on the plate is what gives him satisfaction.
Dedicated and committed, he is a passionate professional with proven ability in dynamic operations. When not cooking for others, he indulges himself in off road driving that takes him to uncharted terrain and tickles his anticipation for the unknown.
