The revival of Indian Durbar has been steered by Executive Chef Eliyaz’s vision for a contemporary yet rooted Indian dining space, brought to life through Chef Harmeet Singh’s distinctive approach to Punjab’s culinary heritage. The team has worked to revive heirloom dishes with authenticity and care, offering guests a journey that feels both familiar and refreshingly new. Where each element on the menu reflects the diversity of the land, thoughtfully crafted to honour tradition while engaging the senses in the present.
