Flourless Moist Almond Chocolate By Chef Suresh V Of Taj Fort Aguada Resort & Spa, Goa

Chef Suresh V – Pastry Sous Chef of Taj Fort Aguada Resort & Spa, Goa has shared a scrumptious recipe of flourless moist almond chocolate that will blow your tastebuds and surely satiate the chocolate craving.

  • 750 gms. Melted Butter
  • 1000 gms. Callebaut Dark Chocolate
  • 500 gms.  Sugar
  • 23 nos. Eggs
  • 200 gms.  Almond flour
  • 10 gms. Snow sugar
  • 5 ml. Vanilla Extracts
  • 1 no. Orange zest


  • In a medium bowl, take egg white and sugar and whisk it together, until you get a soft meringue and then add vanilla extracts.
  • Take a saucepan and add butter and chocolate together. Melt it and cool it down aside.
  • Add the melted mixture into the meringue and incorporate the same till it is smooth. Add almond meal and the zest into the mixture.
  • Pour the batter into the desired mould and bake it at 180°Celsius for 35 minutes.
  • Remove the cake from the oven. Cool it slightly from the bottom and remove it. Drizzle the snow sugar on top and serve it.
